Ingredients

For the sorbet
150 grams sugar
15 centiliters water
½ lemon (peel)
¼ liter fresh pressed lemon juice
1 Lime (squeezed)
¼ liter sweet white wine
4 centiliters Pernod
1 egg white
Limes (for garnish)
For pears
4 large ripe Pear
4 tablespoons sugar
liter sweet white wine

Preparation steps

Boil sugar with water and lemon peel, let cool and strain into the lemon juice. Add lime juice, white wine and pernod. Beat egg whites until semi-stiff and fold with the whisk into the mixture. Place in a metal tray in the freezer.  Stir with a fork every 30 minutes.

Rinse, peel and halve pears. Dissolve sugar in a little water and simmer for 5 minutes over low heat. Add wine and pears and cook for 15 minutes until peras are tender. Garnish with lime, pear slices and serve with lemon sorbet.
