2 sheets clear gelatin
2 centiliters Coconut liqueur
200 grams Whipped cream
300 grams Yogurt (0.1% fat) (coconut flavor)
150 grams Raspberries
2 teaspoons powdered sugar
mint (for garnish)

Preparation steps

Chop the chocolate and place in a bowl over a water bath to melt. Place a sheet of parchment paper on a baking sheet, pour the chocolate out and spread with an offset spatula to form a rectangle of about 20 x 25 cm (approximately 8 x 10 inches). Refrigerate for about 30 minutes. Soak the gelatin in cold water and whip the cream.

Dissolve the gelatin in a small pot over low heat with the coconut liqueur. Stir 2-3 tablespoons of coconut flavored yoghurt into the gelatin, then mix the gelatin into the remaining yogurt. Fold in the whipped cream, cover, and place in the refrigerator.

Score the chocolate rectangle into 8 smaller rectangles. Refrigerate for another 30 minutes. Meanwhile, puree about 20 raspberries, pour through a sieve and stir in the powdered sugar. Carefully loosen and separate the chocolate rectangles from the parchment paper.

On 4 chocolate rectangles, layer the coconut cream and raspberry puree and top with the remaining chocolate squares. Garnish with grated coconut and mint and serve.
