candied Lavender flowers (tea and herb stores or pharmacies)
For the cookies, combine the flour, sugar, lavender sugar, butter and cream in a bowl and bring together. Knead and form into rolls with a 2 cm diameter (approximately 3/4 inch). Wrap in plastic wrap and refrigerate for 1 hour.
Cut the chilled rolls into slices and lay side by side on a lined baking sheet with some distance between them.
Bake in a preheated oven at 180ºC (approximately 350ºF) for 12-15 minutes.
Turn the cookies immediately in sugar and allow to cool on a wire rack.
For the glaze, mix the powdered sugar and lemon juice and brush over each cookie. Place a lavender flower on top of each and then allow to dry.
Store in a dry container and serve with coffee if desired.
