For the bolognese sauce:
100 grams fatty Smoked bacon
1 onion
2 garlic cloves
2 bunches Soup vegetables
2 Tbsps olive oil
300 grams Ground beef
1 lg can peeled tomatoes (800 grams)
peppers (freshly ground)
dried thyme (1/2 tsp)
dried oregano (1/2 tsp)
For the behamel sauce
4 Tbsps butter
3 Tbsps Pastry flour
600 milliliters milk
250 grams Mozzarella
350 grams Lasagne noodle
100 grams grated Parmesan

Preparation steps


For the bolognese sauce: Cut the bacon into small pieces. Peel the onion and garlic and chop finely. Rinse and cut the soup vegetables into small pieces. Cook the bacon in the hot oil over medium heat for about 1 minute. Add the onion, garlic, and soup vegetables. Stir in the ground beef and cook until crumbly. Add the tomatoes with the juice and cook over low heat for 45 minutes, uncovered. Let it simmer, stirring occasionally. Season with salt, pepper, and dried herbs.


For the bechamel sauce: Melt half the butter over medium heat and saute the flour briefly. stir in the milk and bring to a boil, stirring occasionally for about 5 minutes. Bring to a simmer, season with salt, pepper, and nutmeg. 


Cut the mozzarella into thin slices. Grease a casserole dish with oil and make a layer of bechamel. Begin to layer lasagne sheets, bolognese sauce, bechamel, mozzarella, Parmesan. Repeat until all the ingredients are used, the final layer should be bolognese, bechamel, and cheese. Cut the remaining butter into small pieces and place on top of the lasagne. Bake in a preheated oven at 200°C (Approximately 400°F) for about 30 minutes. Serve while warm.
