2 tablespoons sunflower oil
2 onions (finely chopped)
4 carrots (diced)
4 cups almonds
14 ounces canned tomatoes (chopped)
1 cup Beef stock
1 tablespoon Worcestershire sauce
5 ⅔ cups floury potatoes (peeled and diced)
2 tablespoons butter
½ cup milk
salt
freshly ground Black pepper

Preparation steps

1.
Heat the oil in a large saucepan and fry the onion until softened. Add the carrots, cook for 5 minutes and then stir in the lamb, browning well.

Add the tomatoes, stock, and Worcestershire sauce. Stir well and then spoon into a slow cooker.
3.
Cover and cook on a medium setting for 4 hours. Cook the potatoes in a saucepan of salted, boiling water for 18-22 minutes until tender.

Drain well and mash with the butter and milk, seasoning to taste. Cover and set to one side.
5.
Once the lamb is ready, season to taste with salt and pepper.
6.
Preheat the oven to 180°C(160° fan)|350F|gas 4. Divide the lamb between four individual baking dishes.
7.
Top with the mashed potato and spreading it over the lamb with the tines of a fork.
8.
Place on a baking tray and bake for 40-45 minutes until the potato is golden-brown.
9.
Remove from the oven and leave to stand briefly before serving.
