Kiwi Fruit Cocktails
Slice a quarter off the bottom of each kiwi and scoop out the flesh with a teaspoon.
Finely chop the kiwi flesh and mix with the lime juice and honey. Fill the kiwi skins with the mixture.
Beat together the sugar, schnaps and mascarpone. Spoon on top of the kiwis and garnish with raspberries and mint. Serve in egg cups.
