Kale Salad with Pears and Walnuts

- 8 ozs baby Kale
- 1 lemon (juice)
- salt
- freshly ground peppers
- 1 pinch sugar
- 2 Tbsps Walnut oil
- 2 Tbsps olive oil
- 3 Tbsps Walnut
- 4 ozs Daikon radish
- 2 small Pear
- ½ handful Chives
- Garlic Scapes (for garnish)
Preparation

Rinse the kale, spin dry, strip the leaves from the stems and tear small. Combine the lemon juice with sugar and both oils, season with salt and pepper, mix thoroughly with the kale. infuse about 15 minutes.

Toast the nuts in a dry pan until fragrant, let cool then and chop coarsely. Peel the radish and dice finely. Rinse the pears, cut in half, remove the core and slice thinly. Rinse the chives, shake dry and cut into 1 inch long rolls.

Season the kale salad and spread on deep plates. Distribute the pears, radishes, nuts and chives on top Serve garnished with flowers.
