Jam Window Cookies
Mix the flour, powdered sugar, salt, and vanilla. Quickly knead with chopped butter into a dough. Form into a ball, wrap in plastic and chill for 30 minutes.
Roll out the dough in portions about 3 mm (approximately 1/8 inch) between two layers of plastic wrap. With a square cookie cutter, about 3 cm x 3 cm (approximately 1 x 1 inch) cookies. Cut out a small star from half the cookies. Place on a baking sheet lined with parchment paper and chill for 1 hour.
Bake in a preheated oven at 180°C (approximately 350°F) for about 10-12 minutes.
Remove from the oven and let cool. Heat the apricot jam and press through a sieve. Spread the jam on the cookies without a star. Place the cookies with the star on top of the jam. Dust with powdered sugar.
