All purpose flour (plus extra for the work surface)

Preparation steps

1.
Combine all ingredients except jelly in a large bowl. Quickly knead into a smooth dough and form into a ball, wrap in plastic and chill in the refrigerator for 30 minutes.

Preheat oven to 350º F. Line two baking sheets with parchment paper.

On a lightly floured work surface, roll out dough to a 1/8-inch thickness. Cut out circles using a 2-inch fluted cutter. Place half of the cookies on the lined baking sheet. Cut small circles out of the centers of the remaining cookies and place them on the baking sheets. Reroll any dough scraps to make more cookies.

Bake for for about 8 to 10 minutes. Remove from oven and let cool.

In a small saucepan, gently heat the jelly, stirring until smooth. Spoon 1 teaspoon of jelly on the cookie that is whole. Sandwich whole and cut out cookies together and dust with confectioners' sugar. Serve.
