Jam-Filled Star Sandwich Cookies
In the bowl of an electric mixer, beat the butter with the sugar and salt until light and fluffy. Stir in the yolks. Add the sifted flour and knead to a smooth dough. Knead in the pistachios, wrap the dough in plastic wrap and refrigerate 30 minutes.
Preheat the oven to 180°C (approximately 350°F) convection. Line a baking sheet with parchment paper.
Place the dough on a floured surface and roll to 5 mm (approximately 1/4-inch) thickness. With a star-shaped cookie cutter, cut out stars with. Place on the baking sheet spacing them 2 inches apart. Bake until lightly browned, 10-15 minutes. Remove from oven and carefully lift from the baking sheet to a wire rack to cool briefly.
Top half of the stars with a little lemon marmalade and top with a star. Garnish with a dollop of jam and a pistachio. Let cool and dust with powdered sugar.
