Preparation steps

Dissolve the yeast in the milk and stir in 4-5 tbsp flour and the sugar to form a sort of batter. Cover and leave for approx. 15 minutes to start working.

Put the remaining flour in a bowl. Add the yeast mixture, sour cream and butter, and knead to a smooth dough. Add a little extra milk or flour if needed. Knead well for at least 10 minutes so that the dough starts to blister. Put in a warm place to rise for a further 45 minutes.

Heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5. Butter and flour 15 small baking moulds (diameter approx. 7 cm).

Roll the dough into a long sausage on a floured surface and cut into 15 equal-sized pieces. Put these in the moulds, cut a cross in the top and press a well into the centre, pulling the corners of the cross upwards.

Put 1 tbsp jam into each one and bake in the oven for 25-30 minutes until golden brown. Cool briefly and remove from the moulds. Best served warm.
