500 grams Pastry flour
1 cube Yeast
200 grams lukewarm milk
50 grams sugar
5 egg yolks
60 grams softened butter
1 pinch salt
1 teaspoon grated Lemon peel
Pastry flour (for working the dough)
Jam (for the filling)
1 ½ liters Fat (for frying)
powdered sugar (for dusting)

Preparation steps

Stir the yeast with the sugar and milk until dissolved. Mix the flour, egg yolks, butter, salt and lemon peel, add the yeast mixture and process with the dough hook of an electric hand mixer to form a soft dough. Knead until the dough comes away from the bowl. Cover and let rise in a warm place until the volume has doubled.

Knead the dough vigorously on a floured surface, cut in half, shape into rolls, and divide into 6 equal pieces each. Shape into balls and let sit for 30 minutes.

Heat the oil to 180°C (approximately 350°F) and cook the donuts on each side until golden brown.

Remove with a slotted spoon and drain on paper towels. Let cool slightly and fill with jam, using a piping bag with a long, thin tip or a syringe.

Dust the donuts with powdered sugar and serve.
