fresh Sardine (cleaned and gutted, heads and tails intact)
3 tablespoons
olive oil (plus extra for drizzling)
1 clove
garlic (very finely chopped)
coarse salt (to taste)
freshly ground Black pepper (to taste)

lemon (cut into wedges)

Preparation steps

1.
Preheat a charcoal or gas grill for 15 minutes.

In a small bowl whisk the olive oil and garlic to combine; season with salt and pepper to taste. Brush the sardines with the seasoned olive oil. Place the herbs in a grill basket along with a wedge of lemon. Grill for for 3 to 4 minutes on each side, or until just beginning to brown.

Serve immediately with lemon wedges and drizzle with olive oil, if desired.
