large Red onion (thinly sliced)

Preparation steps

Place the sardines in a shallow dish and drizzle with the olive oil, a little lemon juice and a little coarse salt. Cover and chill for up to 1 hour.

Heat the grill to medium hot.
3.
Place the sardines on the hot grill and cook for 3 minutes. Turn the sardines over and cook the other side for about 1 minute, until the fish is cooked through.
4.
Put the sliced onion on serving plates and place the sardines on top. Sprinkle with a little more lemon juice and a little salt.
5.
Garnish with parsley and mint.
