- 2 eggs (separated)
- 1 ¼ cups Mascarpone
- ¼ cup caster sugar
- 1 ½ cups cold, strong, black Coffee
- 2 tablespoons Marsala wine
- 12 ounces Ladyfinger
- 18 ounces Strawberries (sliced)
- 11 ounces Blueberries
Preparation steps
1.
Line the base of a 22cm|9"springform tin with non-stick baking paper.
2.
Beat together the egg yolks, mascarpone and sugar until blended.
3.
Whisk the egg whites until just stiff and fold into the egg mixture.
4.
Mix together the coffee and marsala in a shallow bowl.
5.
Quickly dip the sponge fingers on both sides into the coffee mixture and place on the base of the tin.
6.
Spoon 1/2 the mascarpone mixture over the top and sprinkle with 1/2 the berries. Repeat the layers, ending with berries.
7.
Cover with cling film and chill overnight.
