½ cup Marsala wine (optional)
1 cup Mascarpone
½ cup heavy whipping cream
24 Ladyfinger
1 ½ cups Espresso (at room temperature)
unsweetened cocoa powder (for dusting)

You can substitute the Marsala wine with rum, Ameretto, brandy or coffee liqueur, if desired.

Preparation steps

In the top of a double boiler, set over boiling water, combine egg yolks, sugar, vanilla and Marsala wine. Reduce heat to medium-low, and cook for about 8 to 10 minutes, whisking constantly until mixture thickens. In a separate bowl, mash the mascarpone cheese with a rubber spatula and mix until creamy. Add the thickened egg mixture to the mascarpone, and beat to mix well. In a separate bowl, whip heavy cream to the stiff peak stage. Gently fold into the egg and mascarpone mixture. Set aside.

Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8 x 8-inch / 20 x 20 cm baking dish. Spread half the mascarpone mixture over the ladyfingers. Repeat with remaining ladyfingers and mascarpone.
3.
Cover and chill 1 hour. Sprinkle generously with cocoa just before serving.
