Italian Cookies for Coffee
ready in 1 hr 30 min.
Mix together the flour, sugar, vanilla sugar, almond flavouring and a pinch of salt. Add the butter and chop everything up well. Stir in the eggs, dried fruit and nuts.
Shape the mixture into 2 equally sized rolls, dust with flour and chill for around 30 min.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.
Place the rolls on the baking tray (not too close together) and bake for around 15 min. Leave to cool and cut into 1 cm thick slices.
Return to the oven at 180°C (160°C in a fan oven), 350°F, gas 4 and bake for another 15 min. Leave to cool before serving.
