Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
Mix together the almonds, arrowroot, bicarbonate of soda and salt in a mixing bowl.
Add the honey and orange juice and work with your hands until blended.
Add the sliced almonds, candied peel and chocolate chips.
Dampen hands and form the dough into a log approx 25cm|10? long and5cm| 2? wide on the lined baking tray.
Bake for 15-20 minutes, until lightly browned and firm to the touch. Remove from the oven and cool for 1 hour.
Heat the oven to 120°C (100° fan) 250°F gas 1/2.
Cut each log on an angle into 1cm|1/2" slices with a serrated knife. Space the biscuits slightly apart and bake for a 10 minutes, then turn over and bake for a further 10 minutes until dry and crisp. Turn off the oven and cool in the oven.
