1 ½ cupsAlmond flour
1 tablespoonarrowroot powder
½ teaspoonsbaking soda
¼ teaspoonssalt
¼ cupshoney
3 tablespoonsOrange juice
¼ cupssliced almonds
2 tablespoonscandied Orange peel (strips)
¼ cupsChocolate chip


1 Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
2 Mix together the almonds, arrowroot, bicarbonate of soda and salt in a mixing bowl.
3 Add the honey and orange juice and work with your hands until blended.
4 Add the sliced almonds, candied peel and chocolate chips.
5 Dampen hands and form the dough into a log approx 25cm|10? long and5cm| 2? wide on the lined baking tray.
6 Bake for 15-20 minutes, until lightly browned and firm to the touch. Remove from the oven and cool for 1 hour.
7 Heat the oven to 120°C (100° fan) 250°F gas 1/2.
8 Cut each log on an angle into 1cm|1/2" slices with a serrated knife. Space the biscuits slightly apart and bake for a 10 minutes, then turn over and bake for a further 10 minutes until dry and crisp. Turn off the oven and cool in the oven.
