3.333 cups Strawberries (hulled and sliced)
½ cup caster sugar
2 cups Mascarpone
1 cup whipping cream
4 tablespoons Coffee liqueur (Tia Maria or Kaluha work well)
2 packets Ladyfinger
cup strong Espresso
2 tablespoons cocoa powder (for dusting)

Preparation steps

1.
Blend one-third of the strawberries with 1 tablespoon of the sugar and set aside for later.

In a bowl, blend the mascarpone cheese, half the cream, one tablespoon of sugar and the liqueur and beat together with an electric whisk until it thickens, 3-4 minutes.

In a large square dish, arrange a layer of sponge fingers in the base and brush with espresso. Spread a layer of sliced strawberries and then a layer of the cream and mascarpone mixture on top. Drizzle with some strawberry puree.

Repeat these steps until all the mixture is used, leaving the top layer of sponge fingers brushed with espresso uncovered.
5.
Mix the remaining whipping cream with two spoonfuls of caster sugar together for 2 minutes until it begins to thicken.
6.
Spread over the top layer of sponge fingers, dust with cocoa powder and chill for 1 hour before serving.
