Individual Decorated Floral Cakes

- For the cupcakes
- ⅔ cup butter
- ⅔ cup sugar
- 3 eggs
- 1 unwaxed lemon (juice and zest)
- 1 cup flour
- ½ cup ground Hazelnuts
- ½ tsp Baking powder
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6. Line the holes in a muffin or cupcake tin with paper cases.
Beat the butter with the sugar until fluffy. Whisk the eggs with the lemon juice and zest then add to the mixture, together with the flour, hazelnuts and baking powder. Mix well to incorporate and spoon into the cases. Bake in the oven for around 25 minutes until golden.
Remove from the oven and leave to cool.
For the icing, cream the butter and sugar together then mix through the cream cheese. Stir in just enough icing sugar for the mixture to be easy to spread. Spread over the cupcakes and decorate with the flowers.
