Preheat the oven to 200°C | 400F | gas 6. Line a 12-hole muffin tin with silicone case.
In a bowl, whisk together the sugar, oil, egg and buttermilk.
Stir through the chocolate chips, then sieve in the flour with the baking powder and bicarbonate. Fold until lightly blended, but still a little lumpy. This will help keep the muffins light.
Spoon evenly into the muffin cases then bake for about 25 minutes or until golden and risen.
