square chocolate shells (65 % cocoa)
1 cup

Dark chocolate (65 % cocoa, chopped)
2 teaspoons
raspberry Brandy
1 generous pinch

2 ½ tablespoons
2 tablespoons
Whipped cream (30 % fat)

Preparation steps

1.
Puree half of the raspberries and push through a sieve to remove the seeds. Mix the raspberry puree with the vanilla extract.
2.
Melt the chocolate over a hot bain-marie. Mix with the raspberry brandy and cinnamon.
3.
Beat the egg yolk with the sugar until foamy, fold in the melted chocolate and then the whipped cream.
4.
Spoon half of the mixture into the chocolate cases, spread a little of the raspberry puree on top and carefully cover with the rest of the chocolate cream.
5.
Put into the refrigerator to set for 30-40 minutes. Serve garnished with the rest of the raspberries.
