For the dough
9 ozs Pastry flour
½ tsp Baking powder
4 ozs cold butter
1 pinch salt
2 sugar
1 egg
For the filling and garnish
4 tart Apple
lemons (juice)
1 Tbsp Ground cinnamon
1 Tbsp sugar
1 egg yolk
2 Tbsps milk
sugar
6 Ramekins
butter (for greasing)

Preparation steps

For the dough: Place the flour on a clean work surface and stir with the salt, baking soda and sugar. Press a well into the center. Cube the butter and scatter over the flour. Place the egg and 3 tablespoons lukewarm water to the well. Cut the butter into the flour using a knife or a pastry cutter until crumbly. Knead into a smooth dough. Divide the dough into 6 equal balls, shape into disks, wrap in plastic wrap and refrigerate for 30 minutes.

For the filling: Peel and core the apples, and cut into wedges. In a bowl, toss the apple slices with the lemon juice and sugar.

Roll each dough slightly larger than the molds. Grease the molds with butter. Line the molds with the dough so it hangs over the edges.

Divide the apples between the molds and fold the dough inward.

For garnish: In a bowl, whisk the milk with the egg yolk. Brush on top of the dough. Sprinkle the sugar over the top. Bake in a 390°F oven until golden brown, about 20 minutes.
