3 cups Raspberries
¾ cup caster sugar
1 tablespoon lemon juice
1.333 cups double cream

Preparation steps

1.
Press the raspberries through a fine sieve, sat over a mixing bowl.

Collect the puree and then stir the sugar and lemon juice into it and allow it to stand for 20 minutes at room temperature, stirring occasionally to make sure the sugar is dissolved.
3.
After 20 minutes, whip the double cream in a separate bowl until it has thickened slightly. Fold into the raspberry puree until incorporated.
4.
Pour into small star shaped silicone moulds and transfer to the freezer. Freeze overnight.
5.
Before serving, remove from the freezer and skewer with toothpicks.
