For the batter
150 grams softened butter
100 grams sugar
1 packet Vanilla sugar
3 eggs
200 grams Pastry flour
½ pinch Baking powder
1 pinch salt
1 teaspoon lemon zest
For the icing
250 grams powdered sugar
1 tablespoon lemon juice
2 tablespoons water
red Food coloring
For decorating
pink Sugar pearls

Preparation steps

Line a muffin tin with paper cups. For the batter, beat the butter, sugar, vanilla sugar and eggs until fluffy. Mix the flour, baking powder, lemon zest and salt. Fold the flour mixture into the butter mixture. Pour the batter into the muffin tin and bake for about 20-30 minutes at 180°C (approximately 350°F). Remove from the oven and let cool.

For the icing, mix the powdered sugar, lemon juice, water and food coloring into a smooth glaze. Spread the icing on the muffins and decorate with sprinkles and sugar pearls. Let dry and serve.
