Iced Gingerbread Train
- 150 grams cane sugar
- 150 grams honey
- 100 grams butter
- 400 grams Pastry flour
- 3 tablespoons milk
- 1 egg
- Ground cinnamon (about 1/2 tsp)
- Ground clove (about 1/2 tsp)
- 1 teaspoon potatoes (or baking soda)
- 3 tablespoons Whipped cream
- 150 grams powdered sugar
- 1 lemon (zested and juiced)
- Food coloring
- Train shaped pan
Mix honey, sugar, butter and milk and bring to a boil in a saucepan and let cool. Add egg, flour, cinnamon and cloves and lemon peel into honey mixture. Dissolve potash in milk and mix into dough.
Shape dough into a ball and wrap in foil and refrigerate overnight.
Roll out dough about 1 cm (approximately 1/3 inch) thick and cut out train shape with a cookie cutter or a template and place on a lined baking sheet. Brush with cream and bake in preheated oven at 160°C (approximately 320°F) for about 20 minutes. Remove from oven and let cool and decorate with colored icing.
Mix powdered sugar and lemon juice. Divide icing into portions and tint with food coloring, as desired.
Fill a freezer bag with icing and cut off a small corner and pipe icing over train to decorate. Let icing dry. To serve, arrange cookies on a plate.
