Heat the sugar and the juice in a pot until the sugar has dissolved.
Transfer to a shallow dish and freeze for around 2 hours. Stir every 20 min or so with a fork.
Beat the egg white and fold it into the frozen mixture. Transfer to moulds (approx. 150-200 ml each) and stick wooden sticks in them. Freeze for a further 4 hours. Serve with pomegranate seeds.
