These cookies taste delicious and we simply cannot get enough of them! Not only do almonds provide the nutty aroma, they also get nerves and brain in top shape: with their high content of magnesium (170 milligrams), phosphorus (454 milligrams), vitamin E (25 milligrams) and niacin (1.5 milligrams), almonds are rightly regarded as pure nerve food and as real brain food.
If possible, you should apply icing immediately after mixing, as it becomes solid quickly. Cover the rest of the icing carefully until further processing. For a special flavour, you can mix some cocoa powder or grated instant coffee powder with the sieved icing sugar before stirring.

- For the dough
- 100 grams Pastry flour
- 50 grams finely ground, peeled almonds
- 80 grams butter
- 50 grams sugar
- 1 generous pinch organic lemon zest
- 1 egg yolk
- Pastry flour (for dusting)
For the dough, mix the flour and almonds on a work surface and form a well in the center. Chop the butter into small pieces and spread around the flour. Pour the sugar, lemon zest and egg yolk in the well. Chop the ingredients with a knife and quickly knead into a smooth dough. Wrap the dough in plastic and chill for about 30 minutes.
Preheat the oven to 180°C (approximately 350°F).
Roll out the dough on a floured surface until about 3 mm (approximately 1/4 inch) thick. Use a cookie cutter to cut out shapes (such as Christmas trees or bells). Place the cookies on a lined baking sheet. Bake for 10-12 minutes, until golden. Remove from the oven and cool on a wire rack.
For the icing, mix the egg white with the powdered sugar until thick. Spread most of the icing on the cookies and let dry.
Mix the remaining icing with a little lemon juice. Pour into a pastry bag with a small nozzle. Decorate the cookies, let dry and serve.
