50 grams ground Hazelnuts
40 grams cocoa powder
1 teaspoon Baking powder
2 tablespoons cornstarch
1 pinch salt
6 eggs
1 tablespoon lemon juice
150 grams sugar
sugar (for dusting the kitchen towel))
For filling and decorating
750 milliliters Ice cream (as desired (eg. as walnut, yogurt, lemon, raspberry)
minced Candied lemon
chopped Hazelnuts

Preparation steps

For the batter: Preheat the oven to 200°C (approximately 390°F) convection. Line a baking sheet with parchment paper. Generously dust a kitchen towel with sugar and set aside.

In a bowl, mix the flour with the nuts, cocoa, baking powder, cornstarch and salt. Separate the eggs. Beat the egg whites with the lemon juice until stiff, sprinkle the sugar over the egg whites and beat until shiny. Fold in the egg yolks. Scatter the flour-nut mixture over the egg white mixture and carefully fold in. Spread the batter out on the baking sheet and bake until a wooden pick inserted in the center comes out clean, about 15 minutes. Remove from the oven, and invert onto the kitchen towel, remove the parchment and let cool. Halve the sponge cake. Place a baking frame on a baking sheet or plate and line with plastic wrap.
