Preparation steps

1.

Cut the vanilla bean in half lengthwise, scrape out the seeds and place with the vanilla bean in a saucepan. Pour in the milk and cream, heat slowly and return to a boil. Then remove the vanilla bean.

Whisk the yolks with the sugar in a metal bowl, pour the hot vanilla cream and beat over a hot water bath for about 10 minutes until creamy. Then stir over a cold water bath and place in the refrigerator about 30 minutes. Then process in an ice cream machine.

Rinse, trim and chop the strawberries. Mix with the sugar in a saucepan and simmer for about 5 minutes until soft. Finely puree about half of them, then stir in the remaining berries. Allow the strawberry sauce to cool in the refrigerator.

Spoon the prepared ice cream into a flat rectangular pan lined with plastic wrap. Pour the strawberry sauce on top and loosely fold in. Place in the freezer and freeze for about 2 hours.

Then cut with a cold knife into rectangles approximately 9x5 cm(approximately 3.5 x 2 inches). They should be about 2 cm (approximately 3/4 inch) thick. Place a piece of ice between two cookies and serve immediately.
