1 Vanilla bean
250 milliliters milk
250 milliliters Whipped cream
4 egg yolks
80 grams sugar
30 square Chocolate biscuit

Preparation steps

1.

Slit vanilla pod, scrape out seeds. Combine vanilla seeds and pod with milk and cream in a pot, bring to a boil. Remove vanilla pod.  

2.

Whisk egg yolks with sugar in a metal bowl, add hot vanilla milk adn whisk over hot water bath for about 10 minutes. Cool in a cold water bath, whisking constantly. Refrigerate for about 30 minutes. Finish making ice cream in an ice cream machine.

Spread ice cream in a shallow square dish and cover with plastic wrap. Freeze for at least 3 hours.

Cut with a cold knife into square pieces to fit biscuits (about 7x7cm) (approximately 2 1/2 x 2 1/2 inch), about 1.5 cm thick (approximatley 1/2 inch). Place ice cream square on a biscuit and top with another biscuit. Prepare all ice cream sandwiches in the same manner. Serve with frozen cherries, if desired.
