Preparation steps

For the cake, mix sugar with honey and butter in a saucepan. Heat until mixed. Remove from heat and pour in a bowl. Stir in rum, egg, lemon zest, cinnamon and cloves. Add flour and baking powder. Knead into a smooth dough that doesn't stick to hands. Wrap in plastic wrap and chill for 30 minutes.

For the filling, finely chop raisins and chocolate. Warm honey, remove from heat and mix with chocolate, raisins and nuts. Cool.

Preheat oven to 180°C (approximately 350°F).

Roll dough out on a floured work surface to a size similar to a baking tray. Cut in half. Place one half of dough on a baking sheet lined with baking paper. Spread filling over and top with second half of dough. Bake for 35 minutes or until golden brown.

Remove from oven and cut into rectangles while warm. For the topping, mix egg white with powdered sugar and lemon juice. Spread over rectangles and let dry before serving.
