300 grams clear honey
60 grams sugar
75 butter
250 grams Pastry flour
150 grams chopped almonds
1 packet Baking powder
150 grams Apple juice

For the topping
1 kilogram ripe Apple (such as Boskop)
1 organic lemon
3 eggs
150 milliliters Whipped cream
½ packet Vanilla pudding
100 grams sugar
400 grams Quark
½ teaspoon Ground cinnamon
2 tablespoons sugar

Preparation steps

For the base: combine sugar, honey and butter in a saucepan and heat until butter has melted, remove from heat and let cool slightly.

Combine flour, baking powder and almonds in a bowl, make a well in the middle and add honey mixture, apple juice and beaten eggs into the well. Mix well. Spread batter in a lined with parchment paper baking sheet. For the topping: peel and quarter apples, core and cut into thin slices and drizzle with lemon juice.

Whisk eggs with cream, vanilla pudding powder, sugar and quark. Arrange apple slices on batter, sprinkle with cinnamon and sugar and spread quark mixture on top. Bake in preheated oven at 180°C (approximately 350°F) for about 45-50 minutes.

If cake brown too quickly, cover with aluminum foil. Remove from oven, cool and cut into rectangular pieces. Serve.
