4 Pickled herring
1 onion
2 tart Apple
2 Pickled cucumbers (with 1-2 tablespoons of pickling brine)
150 grams Whipped cream
100 grams Yogurt (0.1% fat)
2 tablespoons Mayonnaise
1 teaspoon lemon juice
salt
1 pinch sugar
freshly ground peppers
scallions (for garnish)

Preparation steps

1.

Rinse the herring fillets and pat dry. Peel the onion and chop finely. Rinse the apples, quarter and core. Cut the quarters into thin slices. Finely dice the pickles.

Mix creme fraiche with yogurt, mayonnaise, pickle brine and lemon juice until smooth. Season with salt, sugar and pepper. Toss dressing with apples, onion and pickles and arrange with the herring on plates.

3.

Serve garnished with chives.
