scallions (washed and cut into rings)

semi-hard Goat cheese
2 ½ tablespoons
1 tablespoon
fresh cilantro leaf (to garnish)

small, ready-made Tortillas

Preparation steps

Rinse the peppers, split lengthwise, remove seeds and chop finely.

Heat the oil in a fondue pot. Add the chopped peppers, garlic and spring onions and saute for 1 minutes. Pour in the wine and gradually add the cheese, stirring constantly with a wooden spoon. Melt the cheese over low heat, once melted increase heat and bring to a boil. Reduce heat and simmer until consistency is thick and creamy.

Combine tequila and cornstarch; stir until blended and smooth. Pour into cheese mixture, mixing until incorporated and creamy. Place the fondue pot on a fondue burner and keep warm.

Meanwhile, heat the tortillas in the oven and cut into 2-inch strips. Roll the cut tortillas and place them on fondue forks. Garnish with cilantro leaves, if desired. Dip tortillas in the cheese mixture and serve.
