Preparation steps

1.

Rinse the blackberries and pat dry. Add the berries, rock candy, and the cinnamon to a wide-mouth carafe. Add the rum and seal tightly. Place the carafe in a dark, cool place for 5 weeks, shaking the carafe occasionally. 

2.

Pass the liquid through a fine strainer lined with cheesecloth into a sterlized bottle. Seal tightly and let age one more week before using.

Can I use honey in place of the rock candy on a 1 to 1 basis?

We haven't tried it with honey but I think it would work perfectly!
