Home-style Pickled Herring with Onion, Apple, and Dill
Soak herring fillets in cold water, about 30 minutes. Mix mayonnaise with creme fraiche and pickle brine. Season with pepper and sugar. Peel onions and cut into thin rings. Finely dice pickled cucumbers. Rinse, quarter and remove cores from apples. Cut apples into thin slices.
Mix dressing with onions, pickled cucumber and apple slices. Rinse dill, set aside a few sprigs and finely chop the rest. Mix chopped dill with dressing. Remove herring from soaking water, pat dry and arrange on a platter. Pour dressing over herring and garnish with lettuce leaves, lemon slices and dill sprigs.
