Home-style Pickled Herring
Peel onion and cut into rings. Peel, quarter and remove cores from apples. Cut apples into thin slices. Cut pickled cucumber into slices as well.
For the dressing, whisk creme fraiche with mayonnaise, milk and vinegar. Season with pickle juice, sugar, salt and pepper. Pour dressing over onion, apples and pickled cucumbers. Mix well.
Rinse herring, pat dry and cut diagonally into bite-sized pieces. Folding into dressing and serve.
Serve herring with boiled potatoes, if desired.
