1 kilogram small Herring (ready to cook)

6 Tbsps lemon juice
3 onions
¼ l Wine vinegar
120 grams sugar
1 Tbsp peppercorns
2 Tbsps Mustard seed
1 tsp allspice
3 sprigs Dill
3 bay leaves
2 Tbsps Pastry flour
5 Tbsps vegetable oil

Preparation steps

Rinse and pat dry herring. Season with salt and pepper inside and out. Drizzle with lemon juice and let stand for 30 minutes. Peel onions and cut into rings. Bring a pot of water to boil. Add onions, vinegar, sugar, spices, bay leaves and 1 teaspoon of salt and simmer for 5 minutes. Season to taste.

Dust herring with a little flour. Heat oil in a large and cook herring on both sides until golden brown, for about 6 minutes. Place into an oval dish and pour over spiced broth. Garnish with dill and bay leaves and soak, covered, for 2-3 days in refrigerator. Serve.
