- 4 big fresh Herring
- Juice (of half lemon)
- 750 grams firm tomatoes
- salt
- freshly ground pepper
- 2 garlic cloves
- 2 onions
- Basil
- 6 Tbsps olive oil
Preparation steps

Rinse the herring, pat dry and sprinkle with lemon juice.

Rinse the tomatoes and cut into slices. Place into a roasting pan and season with salt and pepper.

Peel and finely chop the garlic and onions. Rinse the basil, shake dry and finely chop the leaves. Sprinkle 2/3 onions and garlic and all of the basil onto the tomatoes. Drizzle 3 tablespoons of olive oil over it.

On one side of each herring piece, make 3 cuts about 1 cm deep (approximately 1/3 inch). Place them onto the tomatoes with the cut side up and season with salt and pepper. Sprinkle the remaining onion and garlic on top and drizzle with olive oil. Cook in a preheated oven at 200-220°C (approximately 400-430°F) for 25-30 minutes.
