8 green Herring (ready to cook, each about 80 grams)
freshly ground peppers
2 Tbsps Pastry flour
2 Tbsps butter
1 tsp vegetable oil
1 Red onion
½ small Leek

Preparation steps

Scrub potatoes thoroughly and cook for about 20 minutes in salted water. Rinse dill, shake dry, pluck off top parts and chop.

Rinse herring fillets, pat dry and season with salt and pepper. Coat with flour, heat oil in a pan and cook fish on low heat for about 3-4 minutes per side or until golden brown on both sides. Drain on paper towels.

Peel onion and cut into strips or cubes. Rinse and dry leek, cut into rings. Drain and halve potatoes, combine with dill in a bowl and toss well. Arrange fried herrings on plates and sprinkle with onion. Serve accompanied by dill potatoes.
