½ Cucumber
1 Red chile pepper
1 shallot
2 tablespoons Mango chutney
salt
freshly ground peppers
lemon juice
12 Pickled herring (ready to cook, with tails)
Lemon balm (for garnish)

Preparation steps

For the salsa, peel mango, slice pulp off the pit and cut into very small cubes. Rinse the cucumber, cut in half lengthwise, remove seeds and cut into very small cubes. Rinse chile pepper, cut in half lengthwise, remove seeds and white ribs and finely chop.

2.

Peel the shallot, finely chop and mix with the mango, cucumber, chile pepper and chutney. Season with salt, pepper and lemon juice. Mix with herring and arrange on plates with salsa. Serve garnished with lemon balm.
