- 1 ½ lbs waxy potatoes
- 1 Tbsp Caraway
- salt
- 1 small onion
- 1 pc horse Radish (about 2 ounces)
- 1 bunch Chives
- 1 lemon
- 5 Tbsps
- 1 lb Quark
- peppers
- 1 pinch sugar
- 3 Tbsps Canola oil
- 1 bunch Radish
- 3 sprigs Dill
- 2 Tbsps White vinegar
- 8 Pickled herring (double-fillets; 20 ounces)
- Lettuce (to taste)

Preparation steps

Rinse the potatoes thoroughly under running water. Add to a pot with caraway seeds and cook in boiling salted water for 20-25 minutes, depending on the size.

Meanwhile, peel onion and cut into small cubes.

Peel horseradish and grate finely. Rinse chives, shake dry and cut into rolls.

Cut lemon in half, squeeze out juice and measure 3 tablespoons lemon juice. Stir juice with milk and quark in a bowl. Season with salt, pepper and 1 pinch of sugar.

Stir onion, chives, horseradish and 1 tablespoon canola oil into the quark mixture.

Trim, rinse and slice the radishes.

Rinse dill, shake dry, pluck tips and chop finely.

Mix vinegar, salt and pepper to taste and remaining oil in another bowl. Whisk together until combined. Mix in dill and radishes.

Drain the potatoes, rinse well under cold water and peel. Arrange on plates with herring and horseradish cream. Serve radish salad on the lettuce leaves, if desired.
