- 750 grams new potatoes
- Salt and Black pepper
- 400 grams Quark
- 125 milliliters milk
- 2 Tbsps lemon juice
- 3 shallots
- 2 garlic cloves
- 2 Pickled cucumbers
- 1 bunch Dill
- 8 Pickled herring
Preparation steps

Scrub potatoes thoroughly and bring to a boil in salted water. Cook for 20 minutes. Drain potatoes and peel.

Mix quark with milk. Season with salt, pepper and 1 tablespoon lemon juice. Peel the shallots and garlic. Dice the pickled cucumbers, shallots and garlic. Rinse dill, shake dry and pluck the fronds. Finely chop some of the fronds.
3.
Mix chopped dill, shallots and pickled cucumbers with the quark. Arrange herring and potatoes on plates. Garnish the quark with remaining dill and serve with the herring and potatoes.
