- 5 Pickled herring
- ¼ Cucumber (150 grams)
- 1 Red onion
- 1 small tart Apple
- 2 Pickled cucumbers
- 1 Tbsp Mustard
- 1 Tbsp chopped parsley
- 200 grams Whole Wheat Bread (sliced)
- 50 grams butter
- Lettuce (z. B. Lollo Rosso)
- For garnish
- 50 grams Crème fraiche
- Dill
Preparation steps

Drain the herring and cut into 5 mm (approximately 1/4-inch) cubes. Transfer the herring to a bowl. Peel the cucumber, the onion and the apple. Halve the cucumber and cut into 5mm (approximately 1/4-inch) cubes. Halve and core the apple and cut both the apple and the onion into 5mm (approximately 1/4-inch cubes.

Drain, and finely chop the pickles and add to the bowl with the herring, mustard and parsley. With a cookie cutter cut the bread into 5 cm (approximately 2-inch) rounds and spread with butter.

Rinse the Lollo Rosso leaves, pat dry, pluck the leaves and spread on the bread slices. Put a dab of herring tartare on top and serve garnished with creme fraiche and dill.
