Preparation steps

For the mayonnaise, beat the egg yolk with a pinch of salt and the mustard in a bowl. Using a whisk, stir in the oil, drop by drop at first and then gradually in a thin stream. The mayonnaise should have a nice shine and be thick and creamy. Season with lemon juice and salt.

For the salad, rinse the fish, pat dry and cut into strips. Drain the beetroot and cut into fine strips. Rinse, peel and quarter the apples, remove the seeds and cut into sticks. Peel and halve the onion and cut into strips.

Mix the prepared salad ingredients together and transfer to plates. Garnish with chives and serve with the homemade mayonnaise.
