For the salad
4 waxy potatoes
6 pickled Herring
1 stalk Leeks
1 Apple
lemon juice
2 Tbsps raisins
For the dressing
250 grams Whipped cream
150 grams plain Yogurt (0.1% fat)
2 tsps Horseradish
3 Tbsps White vinegar
3 Tbsps sunflower oil
salt
freshly ground peppers
3 sprigs parsley

Preparation steps

1.

For the salad: Scrub the potatoes and cook in boiling salted water until knife-tender, about 20 minutes. Peel and allow the potatoes to cool, and then chop them into chunks.

Remove the herring fillets from their brine and allow to drain on a paper towel. Cut the fillets into bite-size pieces. 

3.

Rinse the leeks thoroughly and thinly slice them into rings.

Chop the apple and drizzle the lemon juice over to prevent browning.

Pour boiling water over raisins and allow them to sit for a few minutes until plump and rehydrated. Drain and set aside. 

6.

For the dressing: Stir the sour cream, yogurt, horseradish, vinegar and oil together until thoroughly combined. Season to taste with salt and pepper, and add more lemon juice if desired.

7.

For serving: Divide dressing over individual serving plates. Mix all the remaining salad ingredients together and place over the dressing. Garnish ith parsley sprigs.
