Preparation steps

1.

Pat dry herring and chop. Peel potatoes and cut into small cubes. Drain beetroots and dice. Rinse and peel apples, quarter and core, cut into small pieces. Peel onion and chop finely.

Combine vinegar with mustard, lemon juice and oil. Season with salt, sugar and pepper.

3.

Combine all prepared salad ingredients and drizzle with the dressing. Can be served with potato pancakes.
