Herring Salad with Apple Dressing
Rinse herring, pat dry and place 2 pieces per plate. Rinse and dry apples, halve and core. Cut one apple into thin strips, cut the rest into small cubes.
Combine vinegar with honey, orange and lemon juice and apple cubes. Season with salt and spread over herring. Sprinkle with chives and garnish with apple slices. Serve.
