- 8 Pickled herring
- 2 tart Apple
- 4 Pickled cucumbers
- 2 onions
- 1 organic lemon
- 1 tsp sugar
- salt
- peppers
- 2 Tbsps sunflower oil
Preparation steps

Rinse herring, pat dry and cut into bite-size pieces. Rinse apples, quarter, remove cores and finely dice. Drain pickles, reserving liquid, and cut pickles into cubes. Peel onions and dice.

Rinse lemon in hot water and finely grate zest. Squeeze juice from half the lemon and mix with half the zest, sugar, apples, pickles, 2-3 tablespoons of pickle juice, onions and herring. Season with salt and pepper, cover and infuse for 1 hour in refrigerator.

Mix oil into dressing before serving. Pour into small saucers, garnish with remaining zest and serve.
